Coconut lemon cake... yummy!!!!1




Ok, so i can make a pretty great yummy dessert if i say so myself! ahah, but I had never made a layered cake before. Last week I went to my book club and the host made a gorgeous cake. I got the recipe and thought I would give it a go.. I don't think cake making is my forte! It was a bit lopsided, and i think i put too much stuff int he middle, i had a hard time getting the icing on.. ( my friend Heather, told me to invest in good tools.. i will take her advice, love ya babe). It turned out ok, but it for sure didn't look like my friends PERFECT looking cake, BUT it tasted sooo great. Here is the recipe!!!



Lemon coconut cake
1 box French vanilla cake
1 instant vanilla pudding
1 cup mayo
3 eggs
1 cup water
Mix and cook as directed



FILLING ( double this is you are making 4 layers) I didn't and it was fine
1 cup sugar
¼ cup corn starch
1 cup boiling water
4 egg yolks slightly beaten
2 tsp grated lemon rind
1/3 cup fresh squeezed lemon juice
2 tbs water
1) combine sugar and cornstarch in a medium saucepan whisk 1 cup of boiling water. Cook over med heat stiring constantly for a bout 2 mins, until sugar and corn starch is dissolved. Gradually whisk in 1 forth of hot sugar mixture into the egg yolks, add remaining hot sugar mix, whisk all the time stir in rind and lemon juice.

CREAM CHEESE FROSTING
½ cup butter
1 pck cream cheese
16 onz icing sugar
1 tsp vanilla
Beat butter and cream cheese @ med speed with mixer until creamy, add icing sugar and stir in vanilla
Toasted coconut over the top!
